haccoba -Craft Sake Brewery-, operated by haccoba Inc., has released “kasu ,” the second product in its new standard “kasu” series.
The beverage is made by fermenting wine pomace together during the sake-making process.

About “kasu ”
“kasu ” is the second release in the new standard kasu series announced by haccoba -Craft Sake Brewery- in November 2024.
Lees and other by-products inevitably arise when craft producers make their products. Through its experimental “haccoba LAB_” series, the brewery has already released many beverages made from such lees and other unused resources.
Beyond the satisfaction of creating something new from unused resources, haccoba says it has learned that lees can actually be highly effective for building flavor because oils, nutrients, and other components that can complicate alcoholic fermentation have often already been removed.
With that discovery, the brewery decided to establish this style as one of haccoba’s signature offerings and release it with even greater confidence as a regular product.
What’s Inside
“kasu ” crosses genre boundaries and is neither conventional sake nor wine.
It is an unusual beverage made by fermenting rice together with wine pomace, or marc.
The pomace once again comes from Fattoria AL FIORE, a winery in Kawasaki, Miyagi Prefecture.
This batch uses pomace from the cuvée “Ohno Field Blend,” a field blend made from Merlot, Chardonnay, Muscat Bailey A, and other table grapes grown by Ohno Farm in Takahata, Yamagata Prefecture.
The soft umami and acidity from rice combine compellingly with the clean acidity and tannin derived from wine grapes.
