About “KODO 2024”
“KODO 2024” is a wine made from Koshu grapes grown in Yamanashi Prefecture and fermented using yeast originating from samples collected on the Kumano Kodo pilgrimage routes.
The idea for its development came from a relative of Brewing Department Manager Nishiuma, a former president of a sake producer, who was selling sake made with wine yeast as “rice wine.” This led to the thought that sake yeast might also be usable for wine.
Around that time, the Wakayama Industrial Technology Center informed the winery that it had yeast collected from the Kumano Kodo. Testing began in 2023, eventually leading to this wine.
About the flavor
Fermentation with sake yeast brings out soft fruit aromas reminiscent of apple, pear and white peach.
Compared with ordinary wine yeast, the aroma is more restrained and transparent.
Koshu is naturally a variety with gentle acidity, and fermentation with sake yeast is said to make the overall impression even softer.
Sake yeast is particularly effective at drawing out umami, and that characteristic is also expressed in the wine.
A slight sweetness may be perceived, helping improve the overall balance.
The wine pairs especially well with traditional Japanese dishes such as sashimi, tempura, salt-grilled fish and Japanese-style salads.
Wine made with sake yeast remains relatively uncommon.
