On Friday, June 26, 2026, Sapporo Excel Hotel Tokyu will hold “Maker’s Dinner Vol. 2,” a collaboration event with Hosui Winery in Iwamizawa, Hokkaido.
Early reservations made by Friday, June 5 receive a limited-time 20% discount.
About the Collaboration Event
Sapporo Excel Hotel Tokyu launched this collaboration series in March 2026 with the aim of sharing the appeal of Hokkaido wine through food as a hotel based in Hokkaido.
The first event welcomed Domaine Raison of Nakafurano and presented pairings of its distinctive wines with Japanese cuisine.
For the second edition, the hotel is collaborating with Hosui Winery of Iwamizawa.
The winery’s expressive wines, which reflect the terroir of a snowy region, are highly regarded in Japan and overseas. Special dishes designed to complement the wines will be prepared so guests can experience their appeal.
The producer, chefs, and restaurant team including sommeliers have exchanged ideas directly and refined the menu from their different perspectives, creating a one-day-only dining experience.
Program
Maker’s Dinner Vol. 2 with Hosui Winery will serve seven wines from the winery alongside dishes including sashimi, fish, meat, and dessert.

King crab wrapped in paper-thin daikon / cured lean bluefin tuna with caviar Snow-cellar-aged Kutchan potato “540” with mentaiko Tuna / white fish / squid / garnishes Grilled grunt with Hosui wine Grilled rice ball topped with kabayaki sardine / Hokkaido cheese / chervil Steamed and seared salted pork with Kyoto-style cherry miso tomato sauce / assorted seasonal vegetables Cheese tart with aronia jam Wines scheduled to be served include Yuki no Keifu Kerner and Yuki no Keifu Lemberger.
