On Tuesday, July 1, 2025, "hiyori vermouth," a Japanese vermouth made in Katsunuma from Japanese wine and Japanese botanicals, will go on sale.

About “hiyori vermouth”

The product is released by Hiyori Co., Ltd., based in Katsunuma, Koshu City, Yamanashi Prefecture.

"hiyori vermouth" is a Japanese vermouth made with Japanese wine produced at Hiyori Winery in Katsunuma, Yamanashi—the birthplace of grape cultivation in Japan. Selected Japanese botanicals are infused into the wine, including kihada, a tree in the citrus family that has been used medicinally since the Jomon period, and mugwort grown in Yamanashi Prefecture. The blend is then enriched with the company's own brandy and wine-pomace extract, creating a deeper and more refined flavor without added flavorings or colorings.

About the Flavors

The lineup includes Sakura (sweet vermouth), Yuzu (white vermouth), Lemon (dry vermouth), and Kihada (extra-dry vermouth).

All wines used for the vermouth, including Merlot and Koshu made at Hiyori Winery, are Japanese wines.
