"Winebito," an e-commerce mall platform specializing in Japanese wine operated by LASTSHIP Co., Ltd., has announced the "4th Edition of the National Dish Series," exploring the affinity between Japanese food and Japanese wine.
This time, new pairings are proposed for "Gyoza and Japanese Wine."
Here are the details.
About the National Dish Series
The National Dish Series is an initiative where sommeliers supervising Winebito unravel the affinity between Japan's national dishes and Japanese wine to suggest ways to enjoy Japanese wine, aiming to make Japanese food culture even more appealing.
So far, pairings such as "Yakitori and Japanese Wine," "Hot Pot Dishes and Japanese Wine," and "Sushi and Japanese Wine" have been proposed.
This is the 4th edition, and the theme is "Gyoza and Japanese Wine."
About "Gyoza and Japanese Wine"
At "Winebito," tips for choosing the optimal wine are introduced by exploring the pairing compatibility between "gyoza," a quintessential Japanese national dish, and Japanese wine.
To address the endless variations in gyoza flavors, pairings were reportedly devised from the following perspectives.
Perspective 1: Compatibility changing with the presence or absence of garlic
Perspective 2: Compatibility changing with cooking methods
Perspective 3: Compatibility changing with different dipping sauces
Perspective 4: Compatibility changing with toppings
Incidentally, for strongly flavored gyoza, Japanese wines with neutral flavor profiles such as Koshu and Chardonnay are said to pair relatively well.
Furthermore, wines with refreshing herbal or citrus aromas pair well with the vegetable ingredients and garlic chive scents of gyoza, while savory, umami-rich wines with abundant fruitiness are also considered a great match to bring out the juicy umami of the pork.
