For this 2022 vintage, along with an unfiltered white wine, the lineup features a bottled rosé sparkling wine—a first for the project—and a limited, small-batch orange wine.
The newly debuting orange wine was brewed in a limited small batch to express the potential of the Koshu variety, driven by the perspective of creating something that had never been released before.
In addition, during the white wine brewing process using Koshu, repeated tastings and discussions were held right up to the final decision on whether to make it sparkling or still, and whether to filter it or not, depending on the grape's ripeness; the resulting white wine is reportedly a confident creation crafted with the vision of being enjoyed alongside cuisine at the hotel's restaurants.

◆ Yamanashi Nirasaki Muscat Bailey A (Rosé Sparkling)
Featuring a vivid ruby appearance, brilliant bubbles rise in the glass after uncorking, and aromas of fruit expand from the bursting effervescence.

◆ Yamagata Koshu Orange Unfiltered

◆ Yamagata Koshu Unfiltered (White)
Finished unfiltered from the perspective that "impurities are also part of umami," it has a cloudy, pale lemon-yellow appearance.
It offers a dry flavor profile with toasty aromas derived from the yeast, nuances of Japanese citrus, soft acidity, and abundant umami.
