Ginza Aster Main Store to Hold Domaine Kosei Winemaker Dinner on March 24!

On Tuesday, March 24, 2026, Ginza Aster's main restaurant will host a winemaker dinner in collaboration with Domaine Kosei.

A special course highlighting ingredients from Hokkaido and flavors of the thawing season will be paired with wines selected by Kosei Ajimura.

About the Winemaker Dinner

The dinner is part of Ginza Aster's 100th-anniversary celebrations.

Domaine Kosei founder and winemaker Kosei Ajimura, who has played a leading role in Japanese wine, will appear as the featured guest.

While Ajimura shares the philosophy and stories behind his wines, Ginza Aster head chef Karube will serve a special course created for the evening, paired with four Japanese wines.

Menu and Pairings

The course will feature Hokkaido ingredients throughout, including kegani crab harvested after the drift-ice season and richly flavored kinki fish from winter waters, along with produce from Tokachi and Furano.

The wine pairings are scheduled to include a sparkling wine from pioneering Japanese-wine producer Château Mercian, one rosé from Domaine Kosei, and two Domaine Kosei reds.

One of the reds is a gold-medal winner at the 2025 Japan Wine Competition. The event will also mark the debut of a Ginza Aster original wine created to celebrate the restaurant's 100th anniversary.
