On December 5, the original sake "Niida no Gosan Oak Barrel Aged," a collaboration between Niida Honke and Hakko Department, will be released at the Hakko Department Shimokitazawa store and online shop.
It is said to be a sake crafted using oak barrels previously used by Coco Farm & Winery.
Here are the details.
Using a Portion of "Niida no Gosan"
"Niida no Gosan Oak Barrel Aged" is a sake made by aging a portion of "Niida no Gosan"—a sake with an acidity level of 5 born from a brewer's miscalculation (gosan)—for several months in oak barrels previously used by Coco Farm & Winery.
It makes its debut having evolved into a rose-colored sake.
A Sake Reminiscent of Lemonade!
The producer of "Niida no Gosan Oak Barrel Aged" is Niida Honke Co., Ltd.
It is a sake with a flavor reminiscent of a slightly grown-up lemonade, quite distinct from the usual Niida offerings.
In just a single tank, the brewery's lactic acid bacteria worked a bit too vigorously, resulting in a special sake with an acidity of 5.0 that was then aged in oak barrels.
A fruity aroma like plum, a mellow matured flavor, and an acidity akin to lemonade. It is said to have turned out as a deep... yet stylish bottle.
When chilled, cheese or fried oysters are recommended; when served warm, oden or Chinese cuisine are recommended pairings.
