Koshu Pomace in the Spotlight! “Yamanashi Prefecture Gin,” Made with Koshu as a Key Botanical, Debuts!

Star Mark Co., Ltd., which promotes “the best of Japan,” has developed “Yamanashi Prefecture Gin,” a craft gin made with pomace from Koshu grapes grown in Yamanashi Prefecture.

Ahead of the general release, an advance-sales project began on the crowdfunding platform CAMPFIRE on Thursday, November 6, 2025.

A craft gin unique to Yamanashi, Japan’s “wine prefecture”

Star Mark Co., Ltd. runs the “Prefecture Gin Project,” developing craft gins that use specialty products from each of Japan’s 47 prefectures as botanicals to showcase local appeal.

For Yamanashi, the 15th release in the series, the company focused on Koshu grapes, a symbol of Yamanashi, the birthplace of Japanese wine.

In developing “Yamanashi Prefecture Gin,” the company turned its attention to pomace, the grape residue generated during Koshu wine production, and adopted it as the key botanical.

By taking the pomace left after white-wine production and giving it a second life as craft gin, the product is said to express Yamanashi’s terroir.

About Yamanashi Prefecture Gin

The newly developed “Yamanashi Prefecture Gin” has a softly floral aroma.

On the palate, the gentle sweetness derived from Koshu grapes harmonizes with the freshness of juniper, while the finish opens into a deep aroma reminiscent of Italian grappa or pomace brandy.

Served on the rocks or with soda, it lets the character of the grapes come through pleasantly.

It has been created as a bottle likely to attract the attention of Japanese wine fans as well.
