On Saturday, April 26, 2025, Hakuza Co., Ltd. will open a new shop called “Hakunoto” in Kanazawa’s Higashi Chaya District.
Noto’s Heidi Winery is also involved in the shop.

About Hakunoto
Hakunoto is a shop being opened in Kanazawa’s Higashi Chaya District by Hakuza Co., Ltd., a gold-leaf manufacturer headquartered in Moriyama, Kanazawa. The company aims to support Noto’s recovery through co-creation with Noto businesses and help connect that recovery with sustainable regional growth.
Under the theme “Supporting Noto continuously from Higashi Chaya District,” the shop will develop businesses with Noto operators that lead toward the future.
The shop is being co-created with Noto businesses Heidi Winery and Hirami Yuki Farm.
It aims to support Noto’s recovery and build a sustainable model of regional collaboration.
Serving Ingredients from Noto
The shop plans to serve parfaits made with Noto ingredients, including blueberries from Hirami Yuki Farm, as well as wines from Heidi Winery and other beverages.
For the Hakunoto menu, Kanazawa-born culinary researcher Naoko Taniguchi supervises the process based on samples made from the company’s original recipes, refining the flavors repeatedly until each item is complete.
A retail booth inside the shop will sell specialties from Noto.
Products include Noto blueberry sauce from Hirami Yuki Farm and wines from Heidi Winery, as well as authentic barley shochu from Nihon Hakko Kasei in Suzu and ishiru fish sauce, traditionally made on the Noto Peninsula, from Kaneishi in Noto Town.
