Introducing the Domaine Hide × wa-syu collaboration wine "Tsubo-jitate Orange Koshu 2021"! What is Japan's first "breathing ceramic pot"!?

Operated by JUN Co., Ltd., "wa-syu OFFICIAL ONLINE SHOP (hereinafter referred to as wa-syu)" is an online shop proposing the enjoyment of Japanese wine.

On Tuesday, April 5, 2022, a collaboration wine with "Domaine Hide"—a boutique winery familiar to NIHON WINE.JP readers that specializes in brewing red wine produced in Minami-Alps City, Yamanashi Prefecture—was released.

Let's take a look here at just what kind of wine it turned out to be.

An orange wine with an unprecedented new concept!

Born from this collaboration between wa-syu and Domaine Hide is the wine "Tsubo-jitate Orange Koshu 2021."

Crafted by Domaine Hide under winemaker Hideo Shibuya, often hailed as an enfant terrible of the Japanese wine world, this is a collaboration wine available exclusively at wa-syu.

This collaboration wine uses a "breathing ceramic pot" for aging wine, developed by Mr. Shibuya alongside Kyoto's historic pottery kiln "Kasho Kiln (Kasho-gama)."

It is said to be an exceptional masterpiece that brings out a brand-new flavor from Japan's indigenous grape variety, Koshu.

About the "breathing ceramic pot"

The "breathing ceramic pot" mentioned above.

Some of you may be wondering, "Just what kind of pot is it...?"

This pot was jointly developed to craft delicious Japanese wine by Mr. Shibuya and Kasho Morioka, the 4th-generation head of "Kasho Kiln," a Kyo-ware kiln that has created tea ceremony utensils in Kiyomizu, Kyoto for over 100 years.

To create a pot meant for wine, repeated tastings and tests of the optimal clay, glaze, and firing methods were conducted, resulting in Japan's very first ”pot for aging wine”.

The label design for "Tsubo-jitate Orange Koshu 2021" was newly drawn from the "Hirameki" (Inspiration) series by painter Mino Yamamoto, who has also worked on labels such as Domaine Hide's "Tsuki (Moon) Series."

It is finished with an artistic design that visually expresses the maturation process of Koshu grapes in an abstract manner, depicting an image of yeast fermentation.

About "Tsubo-jitate Orange Koshu 2021"

"Tsubo-jitate Orange Koshu 2021" is an orange wine made from Koshu grapes, crafted using Japan's first ”pot for aging wine”.

Unlike many overseas amphorae, this pot does not have wax applied to its interior, so a distinctive feature is that the soil components and the firing method directly influence the wine.

It is finished with a lingering aftertaste that lasts endlessly, featuring citrus fruitiness with a pleasant bitterness reminiscent of kumquat, a powdery and mysterious scent reminiscent of face powder, and nostalgic nuances evoking cedarwood or the taste of pencil lead.

Filled with new discoveries, this is an exquisite bottle that lets you savor an orange wine unique to Japan.
