VIRTÙ, the destination bar at Four Seasons Hotel Tokyo at Otemachi, has launched three Japanese vermouths and a tonic water developed jointly with Hiyori Co., Ltd.
Hiyori is a winery and craft-beverage producer based in Katsunuma, Yamanashi.

Three Japanese Vermouths and a Tonic Water
The new series was jointly developed by VIRTÙ and Hiyori Co., Ltd., the Katsunuma-based winery and craft-beverage producer.
It consists of four products: three vermouths — dry “SÈCHE,” white “SHIRO,” and sweet “AKA” — plus “KARUI,” a tonic water made with a proprietary blend of three Japanese citrus fruits, yuzu, shikuwasa, and jabara, together with Katsunuma-grown Koshu grape extract. The products were created to pair seamlessly with VIRTÙ's signature cocktails.

The vermouths use Japanese and Western botanicals macerated in Katsunuma Koshu wine and Katsunuma Merlot wine made at Hiyori's winery, then blended with Katsunuma brandy.
The result is a range intended to showcase diverse, distinctive flavors and precise craftsmanship.
VIRTÙ Head Bartender Keith Motsi commented that vermouth and tonic water form the foundation of the bar's cocktails, and that the team had long wanted to create authentic ingredients with a light yet expressive Tokyo character and a sense of place.
